Enjera

Enjera, enjerra or injera: a soft, spongy Ethiopian and Eritrean flatbread made with teff/tef (a grain originally from Ethiopia), wheat, barley, oats or cornmeal. Fermented with yeast, it should have a distinct sour tang.
